Mixed veg salad w/ a creamy blended avocado-lime-zucchini-dill-scallion dressing, & roasted new potatoes! I washed, then steamed the potatoes for about 10-15 minutes (new potatoes are just baby potatoes so they’re really small and cook quickly), then I cut them into halves and quarters, placed them on a pan lined with cooking parchment, sprinkled them with onion powder & black pepper, and baked them @ 450°F for a few minutes to crisp them up. I love new potatoes, and prefer them over regular full grown potatoes since they are sweeter (more sugar less starch) & have thinner skins. Always a nice treat in the spring!
